Guava Cucumber Salad

Sometimes, I think I should move to an island! I love passion fruit, guava, mango, sandy beaches…you get the idea 🙂 Unfortunately, most of these tropical fruit (except mango of course) are not usually available in regular grocery stores. I was lucky to find some green apple guavas in a Jamaican specialty store. It was probably a lot more expensive than on an island, but it was worth it for a bit of tropical taste 😉

This is a super fast, refreshing salad that went very well with my flank steak with chimichurri sauce…a true island feast 🙂

Ingredients (serves 2):

  • 1 green apple guava
  • 1/2 English cucumber
  • ~ 5 Boston lettuce leaves
  • 1 lime
  • 1 Tb chopped cilantro
  • salt and pepper to taste

Peel and core guava. Slice into matchsticks. Peel and remove the seeds from the cucumber, slice into matchsticks. Break lettuce leaves into bite size pieces into a bowl. Top with the guava and cucumber slices. Zest ~ 1 tsp lime. Add chopped cilantro. Juice the lime over the salad. Add salt and pepper to taste. Enjoy!

The guava is really tasty and it smells sooo good! I hope to be able to find some red apple guava for a more colorful salad 😉
