Almond Meal Stars with Lemon-Sugar Glaze

I recently bought a bag of almond meal from Trader Joe’s and really wanted to make some cookies, but I couldn’t find a recipe that I liked, so I decided to improvise 🙂 These cookies didn’t turn out very sweet so I decided to make a lemon icing to give the cookies some extra sweetness.

Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 1 1/2 sticks butter at room temperature
  • 1 1/4 cups almond meal
  • 2 eggs
  • 1/2 Tbsp baking powder

Lemon glaze

  • 1 Tbsp freshly squeezed lemon juice
  • zest from 1 small lemon
  • 1/2 cup confectioners sugar

Preheat oven to 350 F. Line a baking sheet with parchment paper.


Beat in eggs one at a time.

Using a spatula mix in the baking powder, almond meal and then the flour 1/4 of a cup at a time until it gets too hard to mix. Knead in the remaining flour. 

Let the dough cool in the fridge for about an hour or longer if you have time. Take the dough out and roll it out. Cut out the cookies using your favorite holiday shape(s).

Arrange cookies on the baking sheet.Bake cookies for 12-15 min. Remove from the baking sheet and let them cool down. 

While the cookies are cooling down, make the icing by mixing all the ingredients until smooth. Spoon glaze over cookies and let harden for 1-2 hrs. 

These cookies turned out really tasty and I like that they are not too sweet. I really like the almond meal in these cookies, but it is important to find the right ratio so the dough doesn’t turn too crumbly. I was originally planning on using only one stick of butter, but I needed the extra 1/2 stick to not have a crumbly dough 😉
