I recently bought a bag of almond meal from Trader Joe’s and really wanted to make some cookies, but I couldn’t find a recipe that I liked, so I decided to improvise 🙂 These cookies didn’t turn out very sweet so I decided to make a lemon icing to give the cookies some extra sweetness.
- 2 cups flour
- 1/2 cup sugar
- 1 1/2 sticks butter at room temperature
- 1 1/4 cups almond meal
- 2 eggs
- 1/2 Tbsp baking powder
- 1 Tbsp freshly squeezed lemon juice
- zest from 1 small lemon
- 1/2 cup confectioners sugar
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Beat in eggs one at a time.
These cookies turned out really tasty and I like that they are not too sweet. I really like the almond meal in these cookies, but it is important to find the right ratio so the dough doesn’t turn too crumbly. I was originally planning on using only one stick of butter, but I needed the extra 1/2 stick to not have a crumbly dough 😉
